Chick’n Salad is a quick, convenient and delicious meal or snack, and we’ve created our own little recipe that is sure to be a crowd pleaser! Our take on the classic Chicken Salad Sandwich is simple, delicious and of course, vegan. This recipe can be modified if you like adding more crunch in the form of celery or walnuts, but we prefer this simple recipe that combines sour apple, sweet and tart cranberries, spicy hot sauce, creamy mayo and of course, savory Deliciou Chicken.

Best Damn Vegan Chick’n Salad

INGREDIENTS:

  • 1 Box of Deliciou Chick’n

  • 1 Granny Smith Apple, Diced

  • 1/4 cup dried cranberries

  • 1 Tbs Piqualé Sweet Hot Sauce

  • 3/4 cup vegan mayo

  • Salt & Pepper to taste

The Sandwich

  • Chick’n Salad

  • Your favorite vegan bread, toasted

  • Vegan Mayo or try our Sweet Hot Aioli ( 1 Tablespoon of Sweet Hot Piqualé with 1/2 cup vegan mayo mixed together)

  • Lettuce or other sandwich greens

DIRECTIONS:

  1. Cook the Deliciou according to the instructions on the box. Let cool for 15 minutes.

  2. Combine Cooked Deliciou, 1 tablespoon of Piqualé Sweet Hot Sauce and 3/4 cup of vegan mayonnaise and mix thoroughly. You may need to add more vegan mayo depending upon how rich and creamy you like your chick’n salad.

  3. Stir in diced granny smith apples and dried cranberries. Mix thoroughly and add salt and pepper to taste.

  4. Toast your favorite vegan bread, add some lettuce and scoop out a heaping portion of the chick’n salad and enjoy!
