Piqualé Vegan Cornbread

Cornbread is one of the most traditional sides with a hearty bowl of Chili. Simple ingredients, easy to make and a smell that brings back memories of your Grandmother serving up a cast iron dish full at dinner. Jiffy, the ubiquitous box of cornbread available at every supermarket, now offers an animal shortening-free version. Vegan as packaged, it takes only a few items from your pantry to have this hot and ready for dinner.

Vegan “Jiffy” Jalapeño Cornbread

INGREDIENTS:

  • 1 Box of Jiffy Vegetarian Cornbread Mix

  • 1/4 Cup Applesauce (or other substitute)

  • 1 Tbs Piqualé Original Hot Sauce

  • 1/3 Cup Plant Based Milk

  • 1-2 Diced Jalapeño peppers, plus a few slices for top garnish

DIRECTIONS:

  1. Pre-heat your oven to 400°F.

  2. Blend ingredients, there will be a few lumps (and that’s ok).

  3. Fill your selected baking vessel or muffin tin.

  4. Top with a few Jalapeño slices.

  5. Bake 15-20 minutes or until golden brown.

  6. Add some Plant Based butter and enjoy!
