Vegan Bánh mì
One of our all time favorite sandwiches is the Bánh mì, a traditional Vietnamese delicacy. Bánh mì actually translates to Bread (Bánh) and Wheat (mì), and refers to the type of baguette like roll it is traditionally served on. We could not find the authentic version, so we went with a French Baguette.
For our version, we’ve swapped out the meat for Tofu and included vegan mayo. Aside from that we’ve tried to keep it simple and traditional, making this a quick meal to put together.
INGREDIENTS:
Bánh mì roll or French Baguette
Seasoned Tofu
Vegan Mayo
Fresh Cilantro
Pickled Veg (our recipe here)
Cucumber
Handful of fresh cilantro
1 jalapeño, sliced thin (optional)
Piqualé Original Hot Sauce
DIRECTIONS:
Slice tofu into thin pieces about the same width as your bread
Sauté or Bake tofu to your liking
Slice your roll lengthways and toast gently
Apply Vegan mayo to both sides of the toasted bread
Add a layer of fresh cilantro
Layer in your tofu evenly
Add a layer of your pickled veg to the tofu
Slice your cukecumber lengthways and add to sandwich
Like it spicy? Layer in those sliced jalapeños
Drizzle with Piqualé Original Hot Sauce
